At Sweet & Flour Bakery in Mapleton, the scent of freshly baked pies, buttery croissants, and handcrafted sweets greets every visitor like an old friend. Behind the ovens is awardwinning baker Jason Walters, whose ‘old school’ methods and passion for perfection have earned the bakery a loyal following— and more than a few pie medals.
“We make everything onsite from scratch—no shortcuts,” Jason said. With 30 years of experience under his apron, and a team that includes a final year apprentice and a first year apprentice, the Sweet & Flour crew are serious about their craft. Famous for their flaky ham and cheese croissants, handmade sausage rolls, raspberry custard tarts, danishes and toasties, Sweet & Flour also boasts a string of award-winning pies—from chicken mornay and massaman curry to breakfast and classic apple.
What’s the secret? “Temperature control is critical, especially in our humid climate,” Jason said. “The pastry needs to bake just right so the case holds the filling without falling apart. And the filling has to be packed with flavour.”
