“We bake certified organic sourdough, handcrafted from 100% Organic Australian flour, water, salt, and our famous mother culture — ‘Mum’. It’s bread with soul: longfermented and naturally leavened,” said bakery owner, David Mares.

Sourdough is a type of bread that is leavened through naturally occurring wild yeast and lactic acid bacteria.

The fermentation process not only enhances its taste but also improves its digestibility and shelf life, making it healthier for the gut and a popular choice among artisan bakers and home enthusiasts alike.

The simple, natural ingredients create the perfect conditions for bread-making through slow fermentation.

The naturally occurring wild yeast and lactic acid bacteria, create a crisp crust and a soft, open crumb with a distinctive tangy flavour and chewy texture.

“Everything starts with a traditional approach, quality flour and time,” he said.

“Long fermentation makes the bread more digestible and allows a greater depth of flavour and texture to develop.”

“We don’t cut corners, and we don’t use margarine — just real ingredients, traditional methods, and the kind of care you can taste,” David said.
